Apple Week: Caramel Apples

We made caramel apples to celebrate Halloween this year. Brett came over and helped dip them before we settled in for an evening of Alfred Hitchcock. We made mostly plain caramel but I dipped a few of mine in melted milk chocolate and crushed peanuts. Without any further tarrying here is Apple Week recipe No. 2! Read the recipe after the jump.

Ingredients:
Parchment paper
Unsalted butter (for parchment)
1 bag (9 ounces) of soft caramel candies
2 tablespoons milk
6 apples
6 sticks
Chopped peanuts and melted milk chocolate (optional)

1. Wash apples (if store bought) briefly in hot water and wipe away waxy coating.
2. Insert sticks and place in fridge for a few hours (chilled apples will help the caramel set faster).
3. Line a baking sheet with parchment paper and grease paper with unsalted butter.
4. Add caramels and milk to a microwave safe container (it helps to use one that is somewhat narrow and tall for ease of dipping). Microwave caramels and milk in one minute increments, stirring in between, until completely melted into a thick yet "dip-able" consistency.
5. Dip apples one by one, and let the excess caramel drip off. Dip in melted milk chocolate or roll in a bowl of chopped peanuts, if desired and place on baking sheet.
6. Place in refrigerator until caramel has set.

One of my favorite fall treats! There is a candy shop nearby in Gettysburg that rolls the bottoms of their caramel apples in fine grain sugar, which adds the perfect bit of texture. Your photo is styled so beautifully too!

I made the mistake of leaving out milk this year and it was a horrid mess! But chocolate mixed into the carmel is such a lovely treat.

did you actually figure out a way to use the striped straws to cover the sticks and stay in place, or are they simply resting over the stick for the picture?
if they are secured in place, could you provide instructions for how to do that?

Hi Eliza -
The sticks are just plain white sticks from the craft store's baking section. Then I added 1/4" ribbon to them by wrapping it around the stick and then securing it with small amounts of non toxic glue at each end.

I was wondering what are the soft caramel candies? I live in England, so Im trying to figure out what you mean by them! A fudge, a toffee, a butterscotch maybe?

Hi Yvie -
Caramels here have a similar flavor to toffee and butterscotch but they are usually very "chewy", similar in consistency to Starburst candies. Hopefully this will help a little.
